Can anyone give me an example of what is required to fulfill the following:
1: write explanation that meets the knowledge requirements identified
I sent off what I had done and got told it wasn't at "degree level"...

In degree courses it is likely that the tutor would ask you to complete an assignment, and advise you of the amount of words (say 1500)that nee to be completed. As the question raised above is an assignment, try asking your assessor (who probably does not have a degree) how many words s/he requires.
Try reading a drug label, i.e the words indide a medication package and get your answer from the advice from that label
