Professional discussion is a recognised assessment method that is used to collect evidence from the candidate. The candidate can use discussion to explain what, how and why they carry out a part of their job; this may include presenting and explaining work products. This should be agreed in advance with the candidate who can then lead the discussion with prompts and clarification from the assessor. Normally, this is most useful in higher level qualifications such as management.
I am not sure that I have see the term 'guided discussion' used as an assessment method. This might be similiar to extended questioning. Both questioning and professional discussion might use guided discussion in this way.

I know that many assessors take exception to this but so long as it is planned, has a logical structure and satisfies the assessment criteria, I don't see any issue with it.
1 of the mandatory units in the aviation package requires a professional discussion, this is a discussion planned by the assessor but presented by the candidate.
A guided discussion generally is lead by the assessor in terms guiding the candidate towards what the assessor is looking for. Generally the guided discussion isn't used, of you are looking for a specific answer to a specific outcome then use questioning.
As Tom said, many assessor/verifiers will have their own interpretation of the two.
